Ultimate from Scratch Chocolate Meringue Pie
You can make a homemade pie – quick and easy – from scratch.
Recipe for the filling
4 TBSP Cocoa
¾ cup sugar
5 TBSP flour
¼ tsp salt
1 ½ c. milk
½ tsp vanilla
3 egg yolks slightly beaten (save the whites for the meringue)
1 TBSP butter
It’s best to use a heavy bottom pot so your custard doesn’t stick and burn.
Mix all the ingredients except the vanilla and butter with a whisk in your pot.
Cook on medium heat, stirring constantly until it thickens. You need to cook it until it is about as thick as you want it for your pie. This is all the cooking it will receive so that’s why you want it thick now. It will thicken just a little bit more from residual heat, and it will thicken just a little bit as it cools.
When it has reached the desired thickness, turn off the heat but leave the pot on the burner. Add the butter and the vanilla and stir vigorously.
**** one little side note, you can make it less thick and have pudding instead of pie ****
Pour filling in baked pie shell.
Recipe for meringue:
4 egg whites (3 saved from the pie yolks, plus one more)
let the egg whites sit until room temperature
beat on high until stiff peaks form
fold in ¼ cup of sugar
Spread meringue over pie custard and bake in oven at 400 degrees for about 10 minutes, just to brown the meringue.
