Move over Egg Nog —
Hello Pumpkin Smoothie!
I’m sure that I am not the first to come up with this, but since no one shared it with me, and I didn’t find it anywhere else. My lil’ mind says, “hey look what I thought of”.
I had some pumpkin puree left over from baking cookies, so I decided that a pumpkin smoothie would be good.
I put the ingredients in a blender for about a minute and I had a beautiful, creamy smoothie.
I used 1 cup of low fat vanilla yogurt
1 cup of pumpkin puree
1 cup of milk
added in some allspice and a couple of ice cubes
That’s it. Let it blend for a minute and enjoy all that hard work with a refreshing pumpkin smoothie.
I put the leftover in an ice tray so I could just dump that in the blender the next day and have another one without all of that hard work 🙂
I actually had two with the leftover since I used only 1/2 of the cubes in the blender with a little milk and I added a little cinnamon this time to make the easy one.
So now I can have another one tomorrow. Yay!!!!
