This simple solution to a homemade ice cream cake is not only delicious, but also easy to make. It can be a little time consuming, but it’s well worth the time it takes to make it.
We have been making this ice cream cake for almost all birthdays in our family for over 10 years. This is a great alternative to the normal cake and ice cream. We started this years ago to cut down on some carbs and fat while still enjoying our “cake” and ice cream. I’m not saying it’s low fat, low carb, or low calorie just a little less than the normal slice of cake covered with ice cream.
And did I mention EASY 🙂
First, as the picture shows, just start with a layer of ice cream sandwiches. You can make this any size. I usually have 15 ice cream sandwiches per layer, and I have also made this in a round spring form pan and just popped it out to finish it off after it set in the freezer for an hour or so. It is so versatile you can make it any way you like it.
After the first layer of ice cream sandwiches, put on a layer of ice cream. Any flavor you like works great.
I like to just cut the container away from the ice cream and then slice it to put over the sandwiches and then take just a minute to spread it out a little bit.
Next, top the layer of ice cream with another layer of ice cream sandwiches. At this point I like to push it down with my hands all over to get the sandwiches seated in the ice cream. I also set it in the freezer at this point for a half hour or so because it’s starting to get a little on the melty side.
The icing is just a concoction of ice cream and whipped topping. I have also added softened cream cheese to this to make it stand up a little better but I didn’t this time.
You could use regular cake icing as well, or just plain whipped topping. I have tried several different ways but it seems the family likes a mixture of whipped topping and ice cream the best. Mix it until it’s smooth and creamy. This only takes a minute because the ice cream is melting.
Plop it on the cake and spread it quickly. Things are getting a bit melty by now. So, spread it quickly and set it back in the freezer. It can be back in the freezer for half and hour or half a day, it doesn’t really matter.
When you take it out of the freezer just use a butter knife and a paper towel to clean up around the edges a bit.
You can decorate it anyway you like. For this particular cake I covered the edges with just plain whipped topping because some of the chocolate ice cream had melted through and ran down the sides. After that, as you can see I put on the candles and some plastic Happy Birthday things that I had in the cabinet from several birthdays ago. Because I save all that stuff in a container for later use. Then I cut and folded a piece of foil 8 x 11 and put on a paper that I had printed.
Easy ice cream cake and easy decorations.
Have fun and make it any way you like it. It’s fun and less expensive than buying and ice cream cake and it really does taste better too.
