Coconut Oil and Butter Mixed together –

How often is it that something that taste really good is also really good for you?
I know controversy abounds around coconut oil and butter, but I am a firm believer that saturated fats are not the enemy that they have been made out to be all these years.  I stand by that because they are natural.  Given to us by nature, not formed in a lab as a synthetic replacement of the good stuff.

THAT IS THE GOOD STUFF
, laden with Medium Chain Triglycerides (MCT’s) and fat soluble vitamins.  There is  a difference in the fatty beef steak and bacon saturated fats (long chain triglycerides) and the good fats found in coconut oil and butter.
Just because I believe they are better than the alternatives found in today’s grocery, doesn’t mean I’m going to sit down to a whole bowl of coconut oil and butter 3 times a day.  But, I will put it on, or in almost anything that is in my bowl or plate.
Again all things in moderation, right?

coconut oil and butter 2For years I have bounced back and forth almost daily between the use of Coconut Oil and Butter. Recently I decided to just blend the two together in a 50/50 mixture, then I won’t be going back and forth between the two but, I will be getting the benefits of both each time I use the mixture.  So that’s what I started doing.  Sometimes I mix just half a stick of butter with 1/4 cup of coconut oil and sometimes I go ahead and fill the butter crock with a whole stick of butter and a 1/2 cup of coconut oil.  Make sure your butter is room temperature before you start mixing it, and you will have a very smooth concoction for your jar or butter crock.  I use this in recipes, on toast, and any other place I would normally use butter.
Also, just in case you are wondering, don’t refrigerate this.  I usually, leave a stick of butter out on the counter.  The only time I put a stick of butter back in the refrigerator after it has been opened is if I am going out-of-town for a few days.  It will get moldy and rancid if it stays out a week or so.  The main complaint from people about not wanting to use real butter is that it’s hard and not spreadable.  Just don’t refrigerate it, problem solved.  Growing up we always had our butter sitting out, I guess with the new fangled margarine and other spreadable butter like products people started keeping them in the fridge and now the younger generation freaks about leaving butter out.  But, it’s okay 🙂

Then a few months after I started whipping up my coconut / butter mixture, a friend shared a delicious “new to me” coffee drink.  Yep, you guessed it, buttered coffee with coconut oil.  Sounds gross doesn’t it.  But it is sooooo good.  Just give it a try.  Hey, butter makes everything better, doesn’t it?

publisher of coffee with grouped pics saved as jpg  2You can just mix the coconut oil – butter mixture in your coffee with a spoon, or you can put it in a blender for a few seconds to make it even more frothy.  Something about emulsifying in the blender.  I don’t know, it’s just a little bit better that way.  So which ever way you choose to do it, it’s good stuff.  Oh come on now, don’t say “how gross” if you haven’t tried it.  If you love coffee, and if you love butter, you will love it.  I usually only have a cup made this way once a day.  🙂  and I only use about 2 teaspoons of the coconut oil butter mixture in a large cup of coffee.

Then……. After I had been enjoying my new beverage for a while, I heard about the diet phenomenon going around that calls for mixing butter and coconut oil in your coffee for all kinds of health benefits and other stuff.  You have got to be kidding me, right. I have not done any research on it. It is called the bullet diet.  I am not promoting the diet, but the coffee mixture is good.  Yes, I think I will go ahead and have a cup of it right now.  publisher of coffee with coconut oil and butter blended pic saved as jpg
