 Are you craving a little treat?  Try this recipe.
The recipe only makes a few, they are light and easy to make.

Best Ever – Quick and Easy Coconut Macaroons

 

Swift Creek-20130117-00082   Ingredients:
14 oz. flaked coconut
1 can of Eagle Brand (or any condensed milk)
3 large egg whites
2 tsp vanilla extract


If interested here’s how you can
*make your own vanilla extract .

*Stir coconut with the condensed milk and vanilla extract and set aside

*Beat egg whites until stiff peaks and  fold into coconut mixture   Swift Creek-20130117-00084

*Scoop onto a baking stone (or any kind of cookie sheet) and bake at 325 degrees for about 20 minutes (until just brown around the edges)

They will spread a little bit while baking. 

Cool for just a couple of minutes, then move to cooling rack or    Swift Creek-20130117-00085paper towel.

These macaroons are a little crispy and chewy
— The perfect macaroon texture

Store in air tight container
